Wild Salmon & Mango Salsa

✓1 lb. Wild Salmon fillet
For the Mango Salsa:
✓three small ripe mangoes, cut into 1/4 inch cubes
✓1/2 red onion, grated
✓1-2 Tbsp. fresh lime juice
✓one medium red pepper, finely chopped
✓1/2 cup cilantro, chopped
✓one small clove of garlic, minced
1/2 jalapenos, minced
✓1/4 tsp salt
✓1/4 tsp pepper
For the Rice:
– Cook the Jasmine Rice according to packet instructions and steam for 40 minutes.
For the Fish:
✓ Season the salmon with salt and pepper, and steam for another 25 minutes.
✓ The salmon should be cooked through.
For the Salsa:
✓In a medium bowl, add all ingredients and gently stir to combine.
✓Adjust lime juice, salt, and pepper to taste.
✓Combine rice and fish in any bowl and cover with the salsa.
