Ingredients:
- Cake flour - 125g
- Cold butter (diced) - 62g
- Egg yolk - 10g
- Water - 30g
- Salt - 1g
- Almond flour - 20g
- Softened butter - 20g
- Egg - 20g
- Powdered sugar - 20g
- Fresh figs (sliced) - 6
Instructions:
1. Add cold butter (cut into small cubes) to the cake flour.
2. Rub the butter into the flour until it is evenly coated and the mixture resembles coarse sand.
3. Add the egg yolk, water, and salt. Incorporate the egg mixture in three parts, mixing well after each addition.
4. Gently bring the dough together by hand until just combined. Wrap in plastic wrap and refrigerate for 30 minutes.
5. Take the dough out of the fridge and lightly flour your work surface. Roll it out into a sheet about 0.2–0.3 cm thick.
6. Press the dough into a tart pan and prick the base with a fork.
7. Line the dough with a piece of foil and add pie weights (such as baking stones or dried beans) to prevent puffing. Bake in a preheated oven at 175°C (350°F) for 15 minutes. Remove the foil and weights, then bake for another 15 minutes.
To make the almond cream filling:
8. Beat the softened butter until smooth and creamy. Add the powdered sugar in two batches, mixing well each time. Gradually add the beaten egg in three parts, mixing thoroughly after each addition. Finally, fold in the almond flour until fully incorporated.
9. Once the tart shell has cooled, spread the almond cream evenly inside.
10. Top with a thin layer of sliced figs and bake in a preheated oven at 170°C (340°F) for 20 minutes.
11. Arrange fresh fig slices on top (peeled if desired). Chill before serving. Drizzle with honey just before serving to enhance the flavor.
